Agreed that good fried rice takes serious finesse! We’ve been let down TWICE by mediocre takeout fried rice in the past month. For my money it needs to brown up in some oil and other sauces and it needs some of that crisping like good Persian rice

I've eaten at both his places and heartily agree! The Fly's Head at 886 is one of the best dishes I had in 2023. Look forward to trying the "less hazy" recipe, though the end result might be even more fun! :-)
