SNACK TIME

People always ask me what I like to cook for myself and I’m always a little embarrassed to admit that I often spend most of my day snacking.
(Unless, of course, I’m testing recipes for something or shooting a video. Otherwise, I’m probably snacking on random things because I don’t always want to cook for myself.)
It’s hard to cook for yourself when 6 out of the 7 days of the week you’re cooking for content or cookbooks or whatever. It’s especially hard since I live alone…cooking for 1 isn’t easy!
So instead of cooking, I snack.
It’s kind of hard to define a snack. I can turn anything into a snack. I’ll snack on leftovers, nuts, cheese, fruit, chocolate, oatmeal cream pies, random condiments with potato chips.
My favorite snack though?
Popcorn.
Popcorn, imo, is the ideal snack. The smell itself is iconic and distinct. Buttery and sweet, whenever I smell popcorn I am immediately transported to the movie theater.
Popcorn is healthy, versatile, affordable, and easy to make on your stovetop, although, truth be told, microwave popcorn is one of my all-time favorite things.
The only problem is that I don’t own a microwave.
BUT! As I mentioned, stovetop popcorn is super easy. My recipe uses ghee or clarified butter. Removing the milk solids from butter helps to keep popcorn from getting soggy.
The cool thing about popcorn—and making it yourself—is that you can add a plethora of seasonings to it. I love to add pre-made seasoning blends to my popcorn, probably because I don’t typically use seasoning mixes in cooking.
For homemade, movie theater-style popcorn, I prefer classic butter and salt. Adding a touch of turmeric to the ghee helps to color the butter slightly, really giving you that “authentic” movie theater vibe.
I also finely grind the salt; this helps the salt stick to the popcorn. There’s nothing worse, imo, than getting to the bottom of the bowl of popcorn and finding most of the seasoning sitting there among the un-popped kernels.
I often find myself eating popcorn for dinner with a plain seltzer (who am I kidding: also with chocolate). It’s quick and easy and brings me a lot of joy.
