One thing I can recommend doing with endives is the classical blue cheese dressing over endives and thinly sliced pear wedges. One of the few sallads where it actually becomes better the next day while traditional sallads "wilt" under the dressing and can't be stored.

Never tried risoto at home, maybe I should give it a whirl. Sicily!

hmm honesetly, I think some grilled skirt steak would kick ass with it, or some grilled snapper or shrimp!!! you kind of can't go wrong. chicken, too! up to you, my friend! <3
